Craig: Great set of videos. You have inspired me to start brewing again after a 15-year absence. I got discouraged when my last few batches went bad. In hindsight, I think it was because I started to get fancy and probably ran into sanitation issues. Your sanitation process really opened my eyes. None of the books ever mention re-using the solution and I never thought about it. Makes sense, though--as long as your equipment starts out clean, you're not adding crap to the solution.

You could be onto something there Craig.I did actually start to use baby bottle 'no rinse' sterilizer recently (milton fluid). I did it to save time. It says on the bottle that its harmless and no need to rinse but maybe the beer doesnt like it! Although alot bottles in the same batch are fine. Thats the baffling part for me. yes I do put the sugar in the bottles..about a teaspoon per bottle(500ml bottles)they're plastic like yours. Ta for your comments..

It may have something to do with sanitizing the bottles. Do you prime your bottles with sugar, or do you add the priming sugar to the entire batch? You probably prime the bottles, and if so, make sure to keep the amount consistent. Make sure your bottles are all sanitized well. Accesive foam can be caused by slight infection. Chilling helps control this. I've had this happen, and following the above advice, there's not much else you can do.

Hi Craigman You've been doing this along time. So I'm hopeful that you can shed some light on a couple of things.I've been homebrewing for about ten months now with the kits after your inspiring set of vids on here.Results are usually very good but every second batch or so I'll get some beers with plenty of carbonation but no head and in the same batch not much carbonation with frothy head.The best ones of course are a good head and lots of bubbles. Why so much inconsistency within a batch??

Hi Craig. Re; my 10% beer. You asked to let you know what it was going to taste like. Well actually it didn't taste unlike my usual brews although it had an extra edge with the extra alc. It is quite deceptively easy to drink but by your second one you know its time you started makin' a couple of shandys with the rest! It actually makes a blinder of a tasty shandy!Goog on its own but in strict moderation. Try IT out man!

Quick couple of questions for you. What kind of DME was that and how many pounds did you use? I use Pilsen Light for all of my brews and steep 1lb of crystal malt(for the flavor) w/ about 1-1/2 cups of roasted malt(for darkening). I tend to enjoy O.G. brews of about 1.045-1.050 Great video, too! :)

I don't know that I'd use a liquid lager yeast without making a starter. The cell count is just so low especially for a cold pitch. I don't think anyone would suggest making starters with dry yeast though. 11.5 grams in 5 gallons is PLENTY of yeast.

I just pitch dry yeast and it starts bubbling in only a few hours. I can't see the reason for making a starter, seems like more possibility for contamination. I'm going to do an Oktoberfest with liquid yeast for the first time. We'll see how that turns out, its only my second all-grain.

True, I'd never put $12 worth of yeast in a 5 gallon batch but he seems to be happy with the results. I use dry yeasts 90% of the time, no starters. Other than that, I've only pitched slurries that people have donated. I've gotten yeast from local brewpubs (there are 3 within 10 miles of me). When I get tired of the styles that dry yeasts are suitable for, I'll get a flask and start making starters.

I won't knock you for starting cheap but as someone who also started with a Mr Beer-like kit, it's actually more expensive that way because you'll never use any part of that kit again after you grab a 6 gallon bucket. Just keep in mind, the beer you'll make at first is not going to be very good. Don't get discouraged. Pick up a beginner 5 gallon kit. The two essential items are carboy fermenter and a bottling bucket. I'd recommend a 6 gallon "better bottle" for about $20.

It depends on what yeast they supplied with the kit. Every strain has its favored temperature range. Some lagers like to ferment at 50-55 while ales do well at 63-72. If it's an ale yeast, you'll have more activity in the mid to high 60's.

As far as an infected batch... Generally, it won't make you ill, but it will make the beer nasty. This is not because of the alcohol, but the pH of the beer. That said, I did once have a commercial beer, or one good swig of one, that had an awful taste. I spent the next 12 hours dry heaving. So just be smart and clean everything very well. There's no reason not to, but at least an anecdotal reason you should.

Well, it keeps out bacteria that could ruin your beer, so I would say... yes. The gas has to escape during fermentation, and that piece permits that while keeping out other baddies that can infect and destroy the batch.

by the way, do a little research if you decide to utilize the liquid yeast, find out if a starter is required. i like to use wyeast smack packs. you can still make a starter but its not required. inside the smack pack there is a yeast nutrient. when this pack of nutrient is broken inside the yeast pack, it feeds it creating a bigger cell count, ensuring that the yeast will be able to compete with any other micro organisms that may enter your brew before fermentation is started.

the biggest difference i cant think of is that while brewers yeast creates both carbon dioxide and alcohol in the process of breakin down sugar bakers yeast, in this same process, will only create carbon dioxide. why? i have no idea. ive been brewing for around a year now and have made at least 25-30 batches. the biggest reccomendation i can give to you is using a liquid brewers yeast. this will utilize your sugars the best and the overall outcome of your brew will be greater.

Brewer's yeast is specifically designed to react with sugars in a way that is favorable for brewing beer or wine, and even those two types differ. Use the type of yeast that suits what you are doing, be it brewing or making bread. I find there's a more uniform result in carbonation if I just stir my sugar into a separate bottling bucket, but that's my deal. Also, I reuse pop bottles as well, mostly the 1 litres for personal use, but any bottle laying around gets cannibalized, and 2 litres go for entertaining. the 12oz bottles I also like for keeping some samples ideal for a beer tasting.

You would have to put it in at the time of drinking, or it will ferment. Breweries stabilize the fermentation before they add flavour and carbonate manually, so there is no more fermentation possible. Home brew relies on fermentation in the bottle to carbonate. Any sugar in the lime will ferment and you will lose the full flavour of the lime.

I think you should be fine. I use sugar because I only use malt extract. You used grains as well, so you don't need as much sugar, or any at all. If however it is week, you know to add more malt extract, or a couple cups of corn sugar. Your beer might be a little on the light side, but it will still taste great, and you can adjust on your next batch.

Craig, I guess I'm slightly more lazy than you. I opted for 2L bottles. I was told that you can use any bottle, PROVIDED that the original drink was carbonated... otherwise the bottle may explode under pressure (non-carbonated drinks don't have the same PSI requirements). For a 23L batch, you can get away with using 11-12 bottles :) What do you think of this idea? Is there any reason why you think this might not be a good idea?

your way is faster but i prefer my all glass method - its more work to use a primary and a secondary but you can let the beer sit for three weeks or so in the secondary and take care of most of the maturing - plus i find it best to let my beer sit in the bottles a minimum of three weeks to age relax and have a homebrew!!!

Caps don't seal well on twist-off bottles. I've had many flat beers that way. You don't have to move the beer, just don't draw the beer from the very bottom where the sediment is. Use a racking cane, or somehow siphon from just above the sediment level and fill your bottles. A siphoning cane touches the bottom, but draws from about .5 inches above. Once you have it securely in place, do not move it or it will stir up the sediment. You can get a clip to clip it onto the side of your bucket.

Got a brew on from the syrup but we keep it in a big barrel and tap it off instead of bottling, and we keep it like that for at least 3 weeks before drinking, in fact now we leave it for at least 2months it tastes even better. A KEGEL pronounced [key-guhl, is an exercise performed by women to strengthen the muscles of the pelvic floor. Also.. when I made this video I was doing a lot of reading about DMS production at temps above 140F. Recirculating the chilled wort into the kettle gets the entire volume of wort down under 140 faster since a direct run to the fermenter would leave some hot wort in the kettle for a long time. I'm not as concerned now. My coolant water is 52F (winter) and I run the pump full throttle.

Chillers work really well when the temp differential is high. When you first run 210F wort into a chiller, it doesn't need 60F water. 85F knocks it down to 120F fast. It's an easy way to save on ice. In any case, I hate prechillers. Next summer I'll be pumping icewater with a $20 pond pump directly into a plate chiller.

Well done. I'd suggest a refurb Baratza Maestro grinder, $63, and some fresh, 3-5 days off roast coffee from your local micro roaster or order some online from Intelligencia in Chicago. You will be blown away! It's like the difference between a fine Belgian microbrew beer and generic white can from 7-11 or a vintage Bordeaux and box wine. The Folger's is good for 1 thing only and you've done it...demo. Treat yourself!

I just gotta find a shed like yours!!! Original box too - that's great. I believe you are correct about the stem stand - very convenient. Once you get hooked on vacuum coffee you'll be looking for other vacuum makers...we have automatic electric, stainless steel, glass and always on the lookout for others. Enjoy the coffee!

What an interesting video. I just found one of these in it's original box when I was cleaning out the shed. There is another piece with it that I didn't see in your video, it is a plastic circle with a short tube sticking out of it. My wife and I figure you just set the top piece's stem into this, sort of like a stand while it cools. I can't wait to try it out and have some coffee. Thanks again for the video.

Physics wise, you didn't address the increase pressure and decrease of pressure is caused by the heating and cooling of the pot. Other then that it was an okay video, hopefully people will start buying vacuum pots more often. Also yama and hario are huge vacuum pot makers in japan. Lastly is the glass rod filter isn't the only other filter, some use a cloth pad and chain, others metal.

Also try heating the water(in the pot,or add already boiling water to the pot, creates temperatures within the actual ideal of 195-205), then adding the upper chamber. You might need to adjust brew time. It might be me, but the burner seems to be at a high temp. Also try making full pots, they work better that way.( but that doesn't mean the pot is completely full, see if you know how much it was intended for?

I agree with syscrusher, but a few things can be added. By fresh coffee from a local roaster, and grind it yourself( you can get a good/great grinder for vacuum pot for between 100-150, plz don't skimp on grinders, if you get fresh coffee, the first time you try it you'll see, and ground coffee goes stale in like 5 min too).

Nice video but I reckon you need to use a lot more ground coffee. Should be about a tablespoon per cup, not a teaspoon for 2 cups. If there's not enough coffee in there the brewing will over-extract the flavor, probably producing something a little bitter.

Excellent video! I've been brewing extract beers, but I'm not thrilled with the results. My beer is pretty good, but I can detect a "syrupy" flavor that I think is coming from the extract. I just made a garage sale cooler into a mash tun this weekend and I plan to brew my first all-grain batch next weekend. Your video will be extremely helpful to me!

I myself don't put much effort into straining hops as I transfer the wort to the primary fermenter (unless I am using whole flower hops). I figure that stuff settles out at the end of primary fermentation and I can rack the beer off of it then. But, many people do things differently, such as creating a whirlpool, letting the wort sit for 20 min, then siphoning the clearer wort from the side of the kettle as a cone of trub sits in the middle. There are other ways to do it too. good luck.

And then add a second amt of water, thus being kind of like a double sparge? And that increases the efficiency w/o extracting unwanted flavors? Huh. I have not heard of that. Sorry I was unclear. I drain the wort after the mash before anymore infusions (vorlauf first). Then I add half the required sparge, vorlauf, drain and repeat. I use 185F sparge water to incrementally raise the temp to make the sugar more soluable. The first infusion usually gets me to 163 and the second gets it to 168 or so. A little more work for a significant increase in efficiency...in my experience.

Great video man. I think our videos and process is very similar. One thing I'd recommend is trying a NO mash out process, but breaking the batch sparge into two equal infusions (185F). I went that route and hit 90% + effeciency with that method whereas the mash out process limited me to low 80s. Give it a shot.

I have most often heard you can range from 1 to 1.5 qts water/lb grain. I typicaly shoot for 1.25. However, if I have more lbs of grain than usual for a higher gravity beer, then I might run a slightly thicker mash, closer to 1 qt/lb so I don't collect "too much" wort and have to boil it longer to reduce the volume.

Thanks for the nice words. The reason I don't rack to the fermenter is first of all, no spigot. Secondly, the pitcher pouring method helps splash the wort into the fermenter and aerate it. Since it is cooled down, that is good for the wort. I pour 2-3 gallons in with the pitcher and then pick up the brewpot and pour the rest. cheers.
